For families in our rural communities, breakfast is more than just the first meal of the day. It is a daily opportunity to nourish growing bodies, strengthen learning, and build healthy habits at home. This season, our Feed the Hungry Chefs collaborated with our Nutrition Team to develop two simple and nutritious hotcake recipes designed especially for mothers in our programs.
These recipes, carefully crafted using affordable and locally available ingredients, offer a delicious way to introduce vegetables, grains, and natural sweetness into a child’s diet. The Hot Cake de Avena y Betabel brings together amaranth, oats, and vibrant beetroot for a fiber-rich breakfast full of color and antioxidants. Meanwhile, the Hotcake de Zanahoria y Plátano combines carrot, ripe banana, and oats for a naturally sweet, vitamin-packed option that toddlers love.
Beyond their flavor and simplicity, these recipes reflect the deeper heart of our mission. Every ingredient was chosen with purpose, from the protein that supports healthy growth to the healthy fats that nourish the brain. Our Nutrition Team reviewed each step to ensure that the recipes meet the nutritional needs of early childhood while staying easy for moms to prepare.
By sharing these hotcakes in our communities, we reinforce one of the most important lessons of our program. Healthy eating does not need to be complicated or expensive. With creativity, local ingredients, and nutritional guidance, families can enjoy meals that are wholesome, comforting, and full of flavor.
We invite you to try these recipes at home and share them with others. Together, we continue building a healthier future for the children of San Miguel, one breakfast at a time.
